1. Zest limes with a microplane into a blender. Juice the limes into a small saucepan and add honey. Bring the mixture just to a boil, stirring until combined. Let the syrup cool. Add syrup, strawberries and mint to the lime zest in the blender and puree. 

  2. Transfer the mixture to a shallow pan and freeze, stirring with a fork every 30 minutes for 2 to 3 hours, or until mixture is firm but not frozen solid. Scrape the granita with a fork one last time and serve in individual chilled vessels.
