The simple act of changing from seed to plant changes starches to sugars and activates important enzymes which cause nutrition to increase dramatically, from three to 12 times, depending on the vitamin! If sprouted in soil, the sprouts will also contain minerals. You can grow your own sprouts on your kitchen counter at any time of year with just a mason jar, mesh lid, seeds and water. You can grow sprouts from many seeds, grains and legumes, but the most common are alfalfa and broccoli sprouts, which either have a mild or sometimes spicy flavor.
Nutrition: Upon sprouting, the plant creates vitamins A, C, E, B12 and other B vitamins. If grown in soil, they will contain additional minerals.
