This decadent desert is Ale Asylum’s take on tiramisu using their own Contorter Porter beer.

Ingredients

3 cups Mascarpone cheese
2 cups heavy whipping cream
2 cups powdered sugar
2 eggs, beaten
2 tbsp. vanilla extract
48 ladyfinger cookies
2 cups Ale Asylum Contorter Porter
1 cup cocoa powder

Directions

Whip 3/4 cup heavy cream. Set aside.

In a separate, larger bowl, using a hand mixer, whip mascarpone, remaining heavy cream, sugar, egg and vanilla. Fold in whipped cream from first step and set aside.

Pour Contorter Porter into a separate bowl. Dip individual ladyfingers very quickly into dish. Be careful not to make them too soggy or they will fall apart. Place 2 to 3 ladyfingers in the bottom of a small rocks glass.

Carefully spread a 1/2-inch layer of the mascarpone mixture on top of the soaked ladyfingers and sprinkle with a small dusting of cocoa powder. Repeat with another ladyfinger layer, and top with another 1/2-inch later of the mascarpone mixture and cocoa powder. Cover and refrigerate for a minimum of 2 hours.

Makes about 6 individual portions, or follow the steps above using an 8 x 8 baking dish.

Suggestions

If you would like to add coffee to this recipe, use 1.5 cups of Porter and 1/2 cup of brewed coffee.
