Cheesy Spinach & Black Garlic Omelet
Yes, black garlic. Black garlic is a specially fermented garlic that transforms any ho-hum dish into something completely new!
Ingredients
3 eggs
3 Tbsp. shredded parmesan cheese
3 Tbsp. cheddar cheese
1 clove black garlic, chopped
Olive oil
¼ cup chopped green onion
1 cup fresh spinach, finely chopped
¼ cup chopped tomatoes
Dash of salt to taste
Sprinkle of pepper to taste
Directions
Beat eggs in bowl and mix in parmesan, cheddar and black garlic.
In a skillet, heat the olive oil over medium heat. Add green onion and cook, stirring occasionally, for about 3 minutes. Place spinach in skillet and cook until just wilted.
Stir in egg mixture and tomatoes and add salt and pepper. Cook until egg mixture sets, 10 to 15 minutes.
