Chile Cumin Butter for Squash
Wake up a side dish with this gutsy spread. Dab the mixture on hot baked winter squash sections, or fold it into cooked, pureed squash.
Ingredients
8 Tbsp. butter, softened
2 serrano chiles, seeded and minced
Grated zest of 1 lime
2 green onions, minced
½ tsp. ground cumin

Beat butter, chiles, lime zest, green onions and cumin until smooth.
Suggestions
Nearly any variety of squash will work: pie pumpkin, acorn, buttercup, butternut, delicata, Hubbard, etc.
