Frittata with Goat Cheese

Ingredients
1 tbsp. sunflower oil
4 eggs
½ cup thinly sliced green onions
2 tbsp. chopped fresh dill
2 ounces fresh goat cheese , cut into teaspoon-sized chunks
Pinch of fresh ground black pepper
Directions
Preheat oven to 350 degrees.
Crack the eggs into a bowl and whip until the yolks and whites are mixed together.
In a 6-inch non-stick and oven-safe skillet (preferably cast iron) heat the oil over medium heat until it just starts to smoke.
Add the whipped eggs and scramble until they are only half cooked—there should still be a good amount of liquid egg.
Add the remaining ingredients and continue to scramble until eggs are mostly cooked but still very wet.
Put skillet into oven and bake for 10 to 15 minutes, or until eggs are firm. Remove from oven and, using a narrow spatula, remove frittata from skillet. Cut into wedges to serve.
Suggestions
Let your child cut the goat cheese with a plastic knife and, if you don’t mind a potential mess, crack and whip the eggs. You can use any combination of seasonal ingredients in your frittatas. Ask your kid what they want in it! Chocolate and pickles?! Ewww.
