Green Herb Buttermilk Dressing
Green is the color of spring! This recipe can be customized for whatever green herbs are available at the moment. Try out different combinations and let us know your favorites.
Ingredients
1 cup buttermilk
1 cup chopped ramp leaves or chives
1 cup chopped mixed herbs of choice (sorrel, blanched nettles, basil/thyme/sage/etc.)
3 Tbsp. whole grain mustard
2 Tbsp. mayonnaise
Juice & zest of 1 lemon
1/2 cup local unrefined sunflower oil or olive oil
Salt and pepper to taste
Directions
Combine all ingredients except the oil in a blender or immersion blender container and blend until smooth. Slowly pour in oil while machine is running to emulsify. Adjust seasoning to taste.
