Herby Cottage Cheese Dip
Cottage cheese often gets neglected in the dairy aisle and isn’t fancy enough to live in the cheese case, but it’s worthy of a little more attention. It’s mild, rich and creamy, low in calories and high in protein. Its versatility is impressive: served at breakfast with berries, tossed into a salad at lunch, can be quickly dressed up with herbs alongside a little bubbly for last-minute entertaining (as shown here), tucked inside lasagna, and used as a healthy, but decadent substitute inside cheesecake or even ice cream. Ingredients
16-oz container small curd cottage cheese
1 tablespoon olive oil
2 tablespoon fresh herbs, finely chopped (parsley, chive, basil, dill are all great choices)
½ cup red onion, diced
1 teaspoon aleppo pepper
Salt and black pepper to taste
Directions
For a smoother consistency pulse in a food processor, or just toss it together in a bowl and stir until ingredients are evenly distributed.
Serve alongside chopped vegetables, with crackers or toast.
