Hmong Chili Sauce
The omnipresent condiment at Hmong meals, chili sauce is varied endlessly but always fiery hot. Feel free to use a different herb or add green onions or garlic, but don’t be shy with the chilies.
Ingredients
3 to 4 red or green Thai peppers, chopped
2 tbsp. cilantro, chopped
1 tbsp. bottled Thai fish sauce
Juice of 1 lime
Pinch of sugar
Directions

Mash chopped hot peppers and cilantro with mortar and pestle until they form a paste. Stir in fish sauce, lime juice and sugar.
