Kirby Collins
This Kirby Collins is incredibly refreshing and a perfect light summer cocktail.
Ingredients
¾ ounce lime juice
½ ounce simple syrup
¼ ounce pickle juice or Kirby cucumber shrub
1 ounce cucumber juice
¾ ounce St. Germain liqueur
1 ½ ounces Tullamore Dew Irish whiskey
Directions
Shake all ingredients and strain into an 8 to 12 oz. collins glass (narrow tumbler) with a small amount of ice. Top with soda water.
Suggestions
This perfectly mellow summer cocktail with a bright citrus and cucumber base was born from the traditional Pickleback shot, wherein a shot of whiskey is chased by a shot of pickle brine. The pickle brine balances the intensity of the whiskey. The recipe calls for a Kirby cucumber shrub (vinegar-based beverage), but organic pickle juice can be used as a substitution.
