Lemongrass Yard-Long Beans

Serves: 6

Yard-long beans grow to impressive length and taste very similar to common American green beans.

Ingredients

3 slender, young lemongrass stalks
2 tbsp. vegetable oil
1.5 pounds yard-long beans, cut into 2-inch lengths
1 sweet red pepper, cut into 2-inch strips
4 green onions, cut into 2-inch pieces
1 tbsp. minced garlic
Minced Thai peppers to taste
2 tbsp. soy sauce
½ tsp. sugar
4 tbsp. chopped basil, mint or cilantro

Directions

Remove outer leaves from lemongrass; slice inner stalks very thinly. Heat oil in a large, heavy skillet over medium-high flame.

Add beans and stir-fry 6 to 8 minutes. Add red peppers; stir-fry 2 minutes. Add green onions, garlic and hot peppers; stir-fry until beans are crisp-tender, 1 to 3 minutes.

Toss in soy sauce, sugar and herbs. Heat through and serve.
