Many-Nut Maple Bourbon Pie
Between the variety of nuts and a number of rich, warming ingredients, this pie is perfect for winter holiday gatherings.
Ingredients
1 unbaked pie crust
1 cup mixed local nuts of choice (hazelnuts, black walnuts, and/or hickory nuts)
3/4 cup maple syrup
4 Tbsp. unsalted butter, softened
1/3 cup brown sugar
2 Tbsp. bourbon
1 Tbsp. flour
1 Tbsp. apple cider vinegar
1 tsp. vanilla extract or vanilla bean paste
1/2 tsp. flake sea salt
1 egg
Directions
Preheat oven to 350 degrees. Place a chilled, unbaked pie crust in an ungreased, shallow, 9-inch pie pan and crimp the edges. Sprinkle nuts evenly over pie crust.
Combine remaining ingredients in a food processor until smooth (or whisk thoroughly by hand in a large bowl). Carefully pour the filling into pie crust.
Place in the oven on the middle rack with a baking sheet on the shelf below to catch any drippings. Bake for 35 to 40 minutes, until pie is set in the middle and dry on top. Chill for several hours before serving to completely set the filling.
Suggestions
Serve with a dollop of vanilla ice cream or whipped cream flavored with cinnamon or apple pie spices.
