Radicchio Salad with Feta, Orange and Mint
This bitter and beautiful salad features radicchio, a member of the chicory family, and it’s going to shake up your salad game this spring.
Ingredients
Dressing:
1 Tbsp. local honey
4 Tbsp. extra-virgin olive oil
1 tsp. orange zest
2 Tbsp. orange juice
2 tsp. red wine vinegar
1/2 tsp. sea salt
Ground black pepper, to taste
Salad:
8 cups (about 2 small heads) chopped radicchio
1 cup thinly sliced red onion 4 oz. feta cheese, crumbled
1/2 cup sliced almonds, toasted
1/2 cup fresh mint, chopped
Directions
Make the dressing: In a small saucepan, warm the honey, oil, orange zest, and orange juice over low heat. Let warm for 5 to 10 minutes, being careful not to let it boil. Remove from the heat and whisk in the vinegar. Season with sea salt and pepper to taste.
Assemble the salad: Place radicchio and onions in a large bowl. When dressing is ready, toss with the vegetables. Season with more salt and pepper, if needed. Sprinkle with crumbled feta, toasted almonds, and fresh mint.
Suggestions
If you find straight radicchio too strongly bitter, make this instead with half radicchio and half milder green lettuce or cabbage (about 4 cups each).
