Raspberry Cucumber Agua Fresca

There is nothing more refreshing in summer than a cool glass of agua fresca! We love sweetening ours with summer berries, which also add a beautiful bright color to the final beverage.

Ingredients

2 cucumbers, peeled and cut into large chunks

½ pint raspberries

2 cups water

2 limes, juiced

½ cup sugar

Directions

Combine all ingredients in a blender, Vitamix or food processor. Process until smooth.

Place a fine mesh sieve over a large measuring cup or pitcher. Pour the mixture through the sieve in batches. Use a spatula to help the liquid through, discarding the solids as necessary. You should end up with about 4 cups of liquid.

Serve the mixture over ice.
