Smoked Fish Spread

Sometimes recipes just get in the way. We make this amazing spread over and over again, but never the same way twice.

Ingredients

Smoked fish, carefully deboned

Cream cheese, softened

Plain yogurt

Minced shallots or finely chopped green onions

Freshly ground black pepper

Chopped fresh herbs such as dill, rosemary, parsley and/or thyme

Lemon juice

There are no set amounts here; it’s all up to you. Just mix everything with a fork until it’s as chunky or smooth as you like. Serve on crackers or crostini, in omelets or sandwiches, with veggies or chips; it’s all good.

Suggestions

This "recipe" is endlessly customizable. Terese says, "For the fish, I might use Lake Michigan whitefish, Lake Superior trout, Mississippi catfish or farmed rainbow trout. The onions may be green or yellow, or they may be shallots or chives. For herbs, it’s dill, rosemary, parsley or thyme. If I’m going for a thicker spread, I use more cream cheese; for a dip, I increase the yogurt."
