Spring Onion Buttermilk Dressing

Prep time: 5 minutes

A deliciously creamy, herbaceous dressing, perfect for spring salads or crudité.

Ingredients

1 cup buttermilk, shaken

1/4 cup mayonnaise

2 Tbsp. Dijon mustard

1/2 cup chopped green onions, chives, ramps, and/or green garlic

1/4 cup chopped parsley

2 Tbsp. chopped fresh dill, thyme, oregano or basil (optional)

Zest and juice of half a medium lemon Sea salt and black pepper to taste

Directions

Combine all in a food processor or blender until smooth (or keep a bit chunky if you prefer). Store in refrigerator for up to a week.

Suggestions

Stir in a quarter-cup crumbled blue cheese after blending to turn it into a spring onion-y chunky blue cheese dressing or dip!
