Strawberry Maple Mimosas

Prep time: 15 mins. plus 30 mins. resting time
Serves: 6

Here’s a classy way to step up the flavor of early season strawberries, make a single pint go a long way and celebrate the return of local fruit, all in one swoop.

Ingredients

2 cups fresh strawberries, finely chopped

3 Tbsp. pure maple syrup

6 perfect whole strawberries, with green tops intact (for garnish)

1 bottle (750 ml) Prosecco or other dry sparkling wine

Directions

Combine chopped strawberries and maple syrup in a bowl; stir well and let stand 30 minutes or longer.

Puree maple-strawberry mixture with a stick blender or food processor.

Cut a slice into each whole strawberry from its bottom tip to near the stem.

To serve, divide Prosecco among 6 champagne flutes and briefly stir 2 tablespoons puree into each glass. Anchor a cut strawberry onto the lip of each glass and serve.
