Sumac-Pickled Red Onions
Pickled onions add a pleasant spark of tang to just about any savory dish. Add dried sumac for an extra hint of flavor!
Ingredients
2 medium red onions, peeled and thinly sliced
1 Tbsp. ground dried sumac
1 cup apple cider vinegar
3/4 cup water
1 Tbsp. kosher salt
1 Tbsp. honey

Pack sliced onions into a clean quart-size glass jar and sprinkle sumac on top.

Bring vinegar, water, salt, and honey to a boil in a small pan, stirring to dissolve salt. Remove from heat and pour over onions, adding a bit more vinegar if needed to cover onions.

Screw on lid tightly and shake everything up a bit, making sure onions are submerged. Let sit at room temperature until cool, then refrigerate for half a day or so before eating. Will keep in fridge for at least a month.
