Za’atar Yogurt Feta Dip
The za’atar blend of spices adds a complex flavor perfectly paired with creamy yogurt and feta cheese. An excellent companion to grilled meats or vegetables.
Ingredients
Za’atar:
4 Tbsp. mix of dried thyme, oregano, and/or marjoram
2 Tbsp. toasted sesame seeds
2 Tbsp. ground dried sumac
1 tsp. flake sea salt
Optional: 1 Tbsp. toasted and ground coriander and/or toasted and ground cumin
Optional: 1 tsp. toasted and ground caraway and/or crushed red pepper flakes
Dip:
2 cups whole plain Greek yogurt (or strained homemade yogurt)
4 oz. crumbled feta, divided
3 Tbsp. olive oil, divided
Zest and juice from 1 lemon
Directions
Combine all the za’atar ingredients in a bowl (or for a finer texture, pulse a few times in a spice grinder or use a mortar and pestle). Reserve 3 tablespoons of mixture; store the remainder in an air-tight glass jar (about 1/2 cup).
In a medium bowl, whisk together yogurt, most of the feta, 2 Tbsp. olive oil, all the lemon juice and zest, and 1 tablespoon of the reserved za’atar mixture.
Transfer to a serving bowl, drizzle with remaining 1 tablespoon olive oil and sprinkle on 2 tablespoons za’atar and feta for garnish.
Serve with toasted pita or fresh vegetables for dipping, or spoon over grilled vegetables, chicken, fish or lamb. Makes about 3 cups dip.
Suggestions
This makes more za’atar mix than needed for this recipe—store the rest in an air- tight glass jar.
