Cooking Tips
- Young scapes are usually tender enough to be eaten raw, but older ones may be tougher and require cooking.
- Puree into pesto with sunflower oil, walnuts, and Parmesan cheese. Freeze to use throughout the year.
- Pack scapes into hot jars and cover with a brine of vinegar, water, salt, and chili flakes. Seal and let stand in the refrigerator for at least two weeks before eating.
- Add diced scapes to scrambled eggs, omelettes, and frittatas.

Around for just a few short weeks in early summer, garlic scapes are the curly-q stems of hardneck varieties of garlic and have a mellow, almost sweet, garlic flavor. If growing garlic at home, once the scapes are about two feet tall and begin to curl, cut them about 6 inches below the flower bud to encourage the garlic bulbs to continue growing.
Nutrition: Garlic scapes are an excellent source of vitamin C, contain many of the beneficial compounds found in garlic bulbs and have antibacterial properties.
