Cooking Tips
- Place a rosemary branch under a squash placed flesh side down and bake.
- Sprinkle shopped leaves on top of breads. Especially good on focaccia.
- Slide rosemary under the skin of chicken or turkey along with butter pats and smashed garlic cloves.

Rosemary is an evergreen shrub typically grown perennially in areas where winters don’t get blow 10 degrees, but it can be grown here in greenhouses, in windowsills or as an annual outdoors. There are many varieties that range from 20 inches to 6 feet tall. Some varieties grow well indoors and look like little Christmas trees. It has a strong, resinous smell that permeates foods, so it is well-suited for “infusing” its flavor into dishes such as chicken or baked squash, as opposed to using the leaf itself.
