Apple Maple Nut Coffee Cake

Ingredients
Filling
3 cups apples, cut in 1/2 cubes (leave peel on if organic)
3 tbsp. butter
¼ cup brown sugar
½ tsp. cinnamon
Cake
1 cup all purpose white flour
½ cup whole wheat pastry flour
½ cup sugar
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
¾ cup plain yogurt or sour cream
⅓ cup maple syrup
2 eggs
Topping
⅔ cup all purpose white flour
⅔ cup oats
½ cup walnuts, black walnuts or butternuts, finely chopped
¼ tsp. salt
½ tsp. cardamom
½ tsp. nutmeg
5 tbsp. butter
⅓ cup maple syrup
Directions
For filling: In a frying pan, saute apples in butter over medium heat several minutes until softened. Add brown sugar and cinnamon and continue to cook for a few minutes until caramelized. Remove from heat.
For cake: Preheat oven to 350 degrees and butter a 9 x 9 inch pan. Sift together dry ingredients. Beat together yogurt, maple syrup and eggs and stir into dry ingredients until just mixed. Spread half of batter into buttered pan, top with caramelized apple filling, then the rest of the cake batter.
For topping: Mix together all ingredients for topping and drop by spoonfuls on the top of the cake.
Bake for 30-35 minutes, until golden brown.
