Black Garlic & Blue Cheese Compound Butter
The way compound butters elevate vegetables and meats, you’d think they were complex kitchen feats, but they take only moments. This black garlic and blue cheese version is perfect for winter dishes and is certainly more than the sum of its parts.
Ingredients
1/4 lb. butter, room temperature
1/4 lb. blue cheese, room temperature
1 head black garlic
Directions

Thoroughly mix all ingredients by hand (a bowl and a potato masher or heavy fork will do the trick) or in a mixer or food processor. Using plastic wrap or waxed paper, press butter mixture into a log and refrigerate until set. Slice and add to roasted squash, mashed potatoes, steak or pork chops right before serving.
