Cashew Aioli

A savory, creamy addition to our Winter Crudités Platter.

Ingredients

¾ cup raw cashews

1 cup water, divided

2 peeled garlic cloves

1 tablespoon lemon juice

1 tablespoon olive oil

¼ teaspoon kosher salt

Directions

In a small saucepan, combine the cashews with ½ cup water. Bring to a boil over medium heat and cook until the liquid is gone, 5–8 minutes.

Add the cashews to a food processor with the garlic and remaining ½ cup water. Blend until smooth, about 2 minutes. Add the lemon juice, olive oil and salt, and blend until just combined. Serve warm or chilled..

This aioli was delicious, but it needed more like 1/4 c of lemon juice and 1 teaspoon of salt.
