Cherry Tomato & Fresh Herb Toss
Dill, tarragon, fennel, chives, basil, thyme— just about every herb loves tomatoes, and their preparation together couldn’t be simpler than in this stunning little skillet dish.
Ingredients
2 pints cherry tomatoes
2-3 Tbsp. butter*
1-2 Tbsp. chopped fresh herbs
Flake salt
Freshly ground black pepper
Directions
Remove stems from tomatoes; rinse and then gently dry them with towels. Heat butter in large skillet over mediumlow flame. Add tomatoes and shake the pan to coat them with butter. Keep shaking the pan occasionally as you warm the tomatoes until they are glossy and fragrant, 3 to 4 minutes.
Take care not to overcook them—in fact, the idea here is not to cook them at all, but to just heat them throughout. (If they burst you’ve gone too far.)
Toss gently with herbs and shower lightly with salt and pepper. Serve immediately.
Suggestions
* Use local sunflower oil or other flavorful cooking oil to make this recipe vegan.
