Creamy Ramp Dip

Make no mistake: This ramp dip packs some serious onion-filled punch. It’s classic ramp “bite” is delicious on crackers and chips. And it’s a stellar topping for burritos.

Ingredients

25 ramps, roots trimmed and rinsed
8 ounces organic cream cheese
2 cups organic sour cream
1 tsp. cayenne
1 tsp. salt

Directions

In a medium bowl, whip together softened cream cheese and sour cream. Add cayenne and salt.

Blanch 20 ramps in boiling water for about 1 minute. Cool quickly in a bowl of ice cubes. Once ramps are cool, chop finely and add to sour cream mixture.

Chop remaining 5 ramps finely and add to sour cream mixture.

Adjust cayenne and salt to taste. Refrigerate dip until ready to serve.
