Prep time: 10 Minutes
Cook time: 5 Minutes
Serves: 2

This recipe features Brenda Jensen’s award-winning Driftless cheese. As you enjoy it, imagine Brenda’s 200+ East Friesian and Lacaune dairy sheep munching away on the pastures of their 76-acre farm.

Ingredients

2 eggs
¼ cup milk
pinch nutmeg
1 tsp. chives
1 cup spinach
¼ cup Driftless cheese
½ tsp. salt
Freshly ground pepper

Directions

1

Beat eggs with milk in a bowl until the mixture is uniform.

2

Stir in nutmeg, salt, pepper and chives.

3

Melt butter in a small skillet over medium heat, making sure pan is coated completely.

4

Pour in eggs, distributing evenly.

5

When one edge of the omelet becomes firm, use a spatula to lift the edge, letting uncooked egg flow under that side.

6

Repeat until entire omelet is firm but not dry, about 3 to 5 minutes.

7

Top with spinach and cheese. Serve warm.
