Fresh Apple Cake

Wisconsin is home to an abundance of apples each year. Vivian Green of Pleasant Springs Orchard recommends talking with your growner about the varieties they sell and pick up preparation ideas from them.

Ingredients

Cake:
3 cups apples, chopped
½ cup walnuts or pecans, chopped
1 cup white sugar
½ cup brown sugar
½ cup shortening
1 cup sour milk, (1 tbsp. lemon juice in fresh milk, let stand 5 minutes)
2 tsp. baking soda
2 eggs
2 ¼ cups flour
½ tsp. nutmeg
½ tsp. cinnamon
¼ tsp. ground cloves
¼ tsp. salt

Topping:
⅛ tsp. cinnamon
⅛ cup white sugar
⅛ cup brown sugar

Directions

Preheat oven to 350 degrees. Grease and lightly flour a 9 x 13-inch pan.

For the cake, in a large bowl, blend white sugar, brown sugar and shortening. Mix in milk and baking soda. Next, mix in the eggs, flour, nutmeg, cinnamon, cloves and salt.

Once thoroughly blended, fold in the chopped apples and nuts. Pour cake mixture into the pan.

For the topping, mix together the cinnamon, white sugar and brown sugar. Sprinkle on the top of the cake.

Bake for 35 to 40 minutes until golden brown.
