Fresh is Best Cole Slaw

This recipe makes a lot of cole slaw, but no matter because it is so delicious that it will not be wasted! It’s excellent on burgers (veggie or meat) and barbecue pork sandwiches, as well.

Ingredients

1 cabbage
4 carrots
1 onion
1/2 cup organic olive oil
1/2 cup real cider vinegar
1/4 cup raw honey
1/4 cup fresh dill: leaf, seeds or a combo
2 Tbsp. fresh parsley
2 Tbsp. fresh lovage or celery
1 tsp. salt
1 tsp. pepper

Directions

Chop cabbage, carrots and onion to salad size of your preference.

Combine olive oil, cider vinegar, honey, dill, parsley, lovage, salt and pepper in a blender and blend until smooth.

Toss together vegetables and dressing and serve in a large bowl.

Suggestions

This cole slaw can be stored in the refrigerator for at least 4 days.
