Grilled Blue Cheese with Pears and Caramelized Onions

Chile-spiked blue cheese plus pears and caramelized onions make this a sandwich you’ll linger over.

Ingredients

Softened butter

Medium-thick slices whole-grain sandwich bread

Caramelized onions, warmed up

Salt and pepper

Ripe pears, cored and sliced

Carr Valley Cheese Company’s Glacier Wildfire Blue (or other chile-spiked blue cheese), sliced or crumbled

This recipe makes any number of servings.

Butter one side of each slice of bread. Place half of them butteredside down on a workspace and distribute the caramelized onions over their unbuttered sides. Arrange pears over onions, overlapping them as you go. Top with blue cheese. Place the remaining bread atop sandwiches, buttered side facing out. Press down lightly so sandwiches compress a bit and hold together.

Heat a cast iron griddle or large heavy skillet over medium flame. Cook sandwiches on both sides until bread is golden brown and cheese is melty. Serve immediately.
