Grilled Zucchini Curls
Grilling does something delicious to zucchini; that is, the caramelizing of the surface sweetens the slight bitterness of the vegetable.
Ingredients
1 small to medium zucchini
2 tbsp. extra-virgin olive oil
Sea salt
Freshly ground pepper
1 tbsp. grated lemon zest
Directions
Prepare an outdoor grill or heat an indoor, cast iron stove-top griddle (ridged side up) over medium flame until very hot, about 10 minutes.
Meanwhile, use a sharp knife to slice the zucchini lengthwise into long planks, about 1/8-inch thick.
Rub both sides of each plank with olive oil and sprinkle with salt and pepper.
Lay the zucchini across the hot grill or griddle. Cook on both sides until grill marks show and zucchini is fully pliable (but not limp), about 3 to 4 minutes per side.
Adjust the heat as the zucchini cooks so you get nice dark grill marks without any burning.
Use tongs to transfer each zucchini slice onto a plate, rolling each one up and piling them against each other attractively.
Sprinkle with lemon zest
