Maple Chipotle Flank Steak
Beef skirt or flank steak is inherently tougher than other cuts of beef. One way to make these cuts more tender is to marinade them prior to cooking.
Ingredients
2 pounds beef skirt or flank steak, thawed and cut into 6 pieces
⅔ cup maple syrup
¼ cup tamari
½ cup water
3 or more garlic cloves, minced
1 ½ tsp. black pepper
½ tsp. chipotle powder
Directions
In a small mixing bowl, whisk together maple syrup, tamari, water, garlic, pepper, and chipotle powder. Place marinade into a resealable bag or a marinating pan. Add raw meat to the marinade and refrigerate for 1 to 8 hours. Turn at least once during marinating.
Preheat grill or light charcoal at least 15-30 minutes prior to grilling steaks.
Before putting the steaks on the grill, clean the grill with a wire brush and season with olive oil (this helps reduce sticking). Place steaks on preheated and seasoned grill and cover. Grill steak for 15-20 minutes until done to your liking.
While meat is cooking, drain used marinade into a small saucepan and bring to a boil. Stirring frequently, simmer marinade for 10 to 15 minutes until it is reduced by half to 2/3 the volume.
Slice grilled steak in thin slices and serve with maple chipotle marinade sauce.
