Maple Mustard Vinaigrette
Move over honey mustard. This recipe is super easy to whip up and the maple syrup puts a twist on a classic salad dressing.
Ingredients
3 Tbsp. minced ramp bulb or green garlic
1/3 cup pure maple syrup
1/4 cup apple cider vinegar
1/4 cup whole grain mustard
1 cup local unrefined sunflower oil
Salt and pepper to taste
Directions

Combine all ingredients in a pint jar and shake vigorously. Alternatively, whisk together all ingredients except oil in a bowl, then slowly pour in oil while whisking vigorously. Or mix all ingredients in a blender or with an immersion blender. Will keep in refrigerator for a couple weeks.
