Marinated Shiitake Mushrooms

Ingredients
1 pound shiitake mushrooms, de-stemmed and thinly sliced
¼ cup grapeseed oil
¼ cup soy sauce or tamari
6 Tbsp rice vinegar
2 Tbsp hoisin sauce
Directions
Remove stems and thinly slice shiitake mushrooms; place in a bowl.
Add all other ingredients and toss with the mushrooms. Marinate for at least 20 minutes.
Preheat oven to 400°F.
When the mushrooms are done marinating, place them on a lined baking sheet and bake them in the oven until crisping at edges and cooked through, 15 to 20 minutes, stirring halfway through. After 20 minutes, pull them from the oven and get ready for flavortown!

Serve as side dish or on a sandwich.
