Ramp Kimchi Jjigae
Ingredients
1 cup roughly chopped ramp kimchi
1 cup diced firm tofu
4 cups low-salt chicken, vegetable or mushroom stock
1 small onion, sliced
2 Tbsp. gochujang chili paste (see suggestions)
1 Tbsp. sempio soy sauce (regular soy is ok)
1 Tbsp. sugar
1 tsp. sesame oil
Chopped scallions and/or garlic chives (for garnish)
Directions

Place all ingredients into a pot. Bring to a low simmer for 5 minutes. Serve with chopped scallions and/or garlic chives.
Suggestions
The gochujang chili paste used in this recipe is a Korean condiment made from red chilies, glutinous rice, fermented soybeans and salt. It can be found at most Asian markets.
