Raspberries in Rum & Lime Syrup

Imagine enjoying this on a raised backyard deck surrounded by a summer garden in lush bloom. That’s the setting Terese was in when she first tasted this amazing combo of fresh fruit macerated in lime syrup.

Ingredients

1 cup water
¾ cup sugar
2 small limes, zest and juice
1 to 3 tbsp. rum
4 cups super-fresh raspberries
2 cups of one of the following: strawberries, mulberries or blueberries; watermelon or cantaloupe cubes; or peeled and diced mangoes

To make the syrup: Combine sugar and water in a saucepan. Bring to simmer. Stir to fully disolve the sugar. Turn off heat, add lime zest and juice. Let cool. Stir in rum to taste. Chill syrup thoroughly.

Gently combine fruit and syrup about one hour before serving. Chill.
