Roasted Curried Cauliflower
This recipe from Anna Thomas Bates of Tallgrass Kitchen is not only a delicious way to serve up cauliflower, but it’s simple and quick too!
Ingredients
¼ cup mayonnaise
1 tbsp. sweet curry powder
1 tbsp. honey
1 tsp. Dijon mustard
½ tsp. salt
1 head cauliflower, broken or cut into small florets
Directions

Heat oven to 450 degrees.

Whisk mayonnaise, curry powder, honey, mustard, and salt together until smooth.

Pour over cauliflower and toss gently until coated.

Lay in single layer on a baking sheet lined with parchment or a silicone mat.

Roast for 20-30 minutes, stirring halfway, until tender and golden brown in spots.
