Embrace the season with a vibrant, grown-up mocktail. This nonalcoholic gin sour combines an arugula-infused gin with a strawberry-rhubarb simple syrup to create a celebration of fresh, spring flavors. The drink offers a sophisticated balance of sweet-tart fruit and surprising peppery herbaceousness. Ingredients

2 ounces arugula-infused zero-alcohol gin

¾ ounce fresh lime juice

¾ ounce strawberry-rhubarb simple syrup

1 egg white (or 2 dashes Fee Brothers Fee Foam)

Pour the infused gin, lime juice, simple syrup, and egg white into a cocktail shaker. Shake hard for 10 seconds. Add ice to the shaker, then shake hard for another 10 seconds. Strain into a martini glass. Garnish with a skewered strawberry half or lime wedge.
