Southwest Celeriac Slaw

Serves: 6

Celeriac is high in vitamin C, phosphorus and potassium, and a good source of magnesium, vitamin B6, trace minerals and fiber. Learn more from Dani’s article, “Adventures with Celeriac.”

Ingredients

1 large head of celeriac
1 large carrot
1 large turnip, (scarlet turnips look nice)
1 tbsp. lemon juice
Lemon zest
1 egg yolk
1 tsp. apple cider vinegar
1 tsp. grainy mustard
1 tsp. honey
¼ tsp. dried marjoram
⅛ tsp. chipotle powder
½ tsp. cumin seed, toasted (optional)
½ cup Driftless Organics sunflower oil
Salt
Freshly ground pepper

Directions

With a sharp pairing knife, peel celeriac, immediately grate it, and toss it with lemon juice and zest in a medium bowl.

Grate carrot and turnip and add to the bowl.

In another bowl, whisk together the remaining ingredients except oil.

While whisking briskly, add oil in slow stream until emulsified. Fold in vegetables and serve.
