Sweet & Sour Ginger Cucumbers
According to Chinese belief, the cooling, calming nature of cucumbers defines them as a yin food. But in no way does that mean they have to be a boring food. The simplicity of the ingredients in this preparation belies its exciting flavor.
Ingredients
3 to 4 medium cucumbers
1 cup seasoned rice vinegar
¾ cup sugar
1 tsp. salt
1 ½ tbsp. fresh ginger, minced

Take your pick for the first step with the cucumbers: 1) peel them, for maximum tenderness; 2) score them lightly with fork tines down their length, for good looks; or 3) leave them as-is, for greatest nutrition.

Cut the cukes in half lengthwise and scoop out the seeds with a spoon. Now slice thinly into half-moons.

Toss with remaining ingredients and chill thoroughly before serving.
