Easy Tofu Scrambled Eggs
Looking for ways to make your meals plant-based? Substitute these easy tofu eggs in your favorite scramble or breakfast sandwich.
Ingredients
1 tablespoon olive or vegetable oil
1 (16 oz) block of firm tofu, crumbled with a fork
2 tablespoons nutritional yeast
2 tablespoons Braggs amino acid
¼ teaspoon turmeric
¼ teaspoon garlic powder
3 tablespoons unsweetened, plain plant-based milk or vegetable broth
Salt and ground black pepper, to taste
Directions
Heat oil in a large pan over medium heat. Place the tofu into the pan, and use a fork to roughly crumble the tofu. Cook and stir until the water from the tofu is mostly gone, about 4 minutes.
Mix in the nutritional yeast, Braggs, salt, turmeric and garlic powder. Cook and stir constantly for about 5 minutes.
Pour the non-dairy milk or broth into the pan and stir to mix. Season to taste with salt and pepper. Serve immediately or chill, and gently reheat as needed.
