If you’ve never had made-from-scratch pudding, you are missing out. It’s simple to make and the taste will keep you from ever buying the stuff in stores.
Ingredients
2 cups milk
1 egg yolk
½ cup granulated sugar
2 tablespoons cornstarch
¼ teaspoons salt
1 tablespoon Vanilla Beanery vanilla extract
1 tablespoon butter
Directions
In medium saucepan, add milk and egg yolk, whisk until yolk is blended.
In a separate bowl combine sugar, cornstarch, and salt.
Heat milk and egg mixture over medium heat until very hot but not boiling.
Pour sugar, cornstarch, and salt mixture slowly into milk mixture stirring to dissolve. Continue cooking and stirring until mixture begins to stick to metal spoon. Do not boil.
Remove from heat, stir in butter and vanilla. Pour into serving dishes. Refrigerate.
Suggestions
We recommend Vanilla Beanery extract, processed locally in Sun Prairie. Read more about them in this issue’s Notable Edibles, "Vanilla Beanery."
