Watercress & Smoked Trout Salad
Watercress’s peppery pungency is refreshing and lively in fresh salads, sandwiches, pesto, dips and as a garnish. We dive into this wild, super-nutritious food in “Watercress: Legendary Harbinger of Spring.”
Ingredients
1/3 cup chopped scallions (white and green parts)
1/4 cup chopped fresh parsley
1/4 cup mayonnaise
1/4 cup sour cream
2 Tbsp. fresh lemon juice
2 tsp. fresh lemon zest
2 Tbsp. capers, drained
8 oz. boneless Wisconsin smoked trout fillets, skinned and flaked into pieces
1 bunch watercress (lower stems removed), washed carefully and well-drained
French bread (optional)
Directions
Mix together scallions, parsley, mayo, sour cream, lemon juice, lemon zest, and capers in a bowl.
Fold in trout.
Serve with watercress on slices of French bread, or as a salad dressed with lemon juice and oil.
