Cooking Tips

  • Milk is a versatile food, used in baking, sauces, soups and good ol’ drinking glasses.
  • Most milk is homogenized, but try a non-homogenized milk sometime. Skim off the cream and use in baking or give your coffee a treat.

Wisconsin: the dairy state. Milk is not only a drink here, it’s a way of life for over 14,000 farmers in the state. Wisconsin is second in the country behind California for milk production, and according to the Wisconsin Milk Marketing Board, dairy’s impact “on our state's economy is more than twice that of the citrus industry's impact on Florida's economy and nearly nine times the economic impact as Idaho's potato industry.”

Choosing organic milk is very important not only to your health—especially for children—but the choice also trickles down to better pay for farmers, better treatment of animals, and better stewardship of resources. A great resource to learn more about the health and environmental effects of pesticides and GMOs and the benefits of choosing organic is the Organic Center’s State of Science reviews and Critical Issue Reports—learn about everything from why organic foods are nutritionally superior, to the real dangers of pesticides in our food, to the benefits of organic dairy production and more.

Nutrition: Organic milk from pastured cows has been shown to contain higher levels of beneficial omega-3 fatty acids and conjugated linoleic acid (CLA). Milk is also a great source of protein and calcium.
