Thyme is often lumped in with rosemary and sage for its pungent, resinous taste and peppery aroma. Thyme grows well in poor soil in the garden, or it does well in countertop herb gardens. Green garden thyme is the most commonly used in cooking, but you can find lemon thyme at some farmers markets, which adds a slight lemony flavor and is great for fish or steeping into teas.
