Apple Chutney
A delicious accompaniment to so many dishes and especially with meat, try making this chutney with your favorite local apples when they are in season.
Ingredients
5 medium local apples, peeled and cut into 1 inch chunks
1 cup dried Wisconsin cranberries
½ cup yellow onion, coarsely chopped
2 garlic cloves, minced
2 inches ginger, minced
1 tsp. red pepper flakes
½ cup local honey
1 cup apple cider vinegar
1 tsp. brown mustard seed
½ tsp. allspice
½ tsp. salt
½ tsp. freshly ground pepper
Directions
Combine all ingredients in a thick-bottomed pan, bring to a boil and simmer on low for about one hour, stirring occasionally.
Depending on juiciness of the apples, you may have to add a bit of water to prevent scorching.
Keeps in the fridge for a couple weeks.
