Creamy Rhubarb Dressing
This unique, sweet-tart salad dressing is a good way to use up some of that rhubarb from the garden (or left on doorsteps).
Ingredients
1-2 rhubarb stalks, simmered in water until soft
2 tbsp. honey
2 tbsp. rice or red wine vinegar
Dollop of prepared organic stoneground mustard
¼ cup olive or local sunflower oil
Directions

Blend rhubarb with honey, vinegar and mustard.

With blender running, drizzle in oil until thick and creamy.

Store in the refrigerator for two to three weeks.
