Curried Sweet Potato Bisque

Ingredients
1 large yellow onion, diced
3 large celery ribs, diced, or 1 large celeriac, peeled and diced
3 garlic cloves, chopped
4 large sweet potatoes, peeled and diced
2-3 tbsp. olive oil or local sunflower oil
1 ½ Tbsp. curry powder
4 ½ cups stock or water
3 Tbsp. maple syrup
6 Tbsp. cream
Salt & freshly ground pepper
Directions
Heat oil in a pot until it just starts to smoke. Add onion, celery and garlic and saute until onions become translucent.
Add curry powder and stir constantly until curry aroma is strong (about 30 seconds).
Add sweet potatoes and stock and bring to a boil.
Reduce heat and simmer until sweet potatoes are very tender.
Puree in a blender or food processor in batches until very smooth. Add cream and maple syrup.
Salt and pepper as needed.
