Fresh Spring Omelette with Sausage and Chives
Sausage and chives bring a burst of spring flavor to farm fresh eggs in this omelette recipe from Dan Bonanno, featured on the Spring Blini Brunch Board.
Ingredients
2 oz crumbled sausage
3 farm fresh eggs
Salt & pepper, to taste
2 Tablespoons milk, cream, sour cream or creme fraiche
1 teaspoon butter or oil
1 oz grated Alpine-style cheese
1 tablespoon chopped chives
Directions
Brown the sausage in a pan over medium-high heat. Remove to a towel-lined plate to drain.
Wipe out the pan and decrease temperature to medium.
Whisk eggs in a bowl, season with salt and pepper and add milk.
Place butter in pan, and swirl around to melt. Pour in the eggs and gently cook. When partially set, add the crumbled sausage and cheese, sprinkle with half the chives. Carefully roll the omelette onto a plate, and finish with more chives to serve.
