Dan Bonanno presents a Spring Blini Brunch Board featured during Edible Madison's Spring Brunch Party, brought to you by Jones Dairy Farm.

Ingredients

Classic, Coffee and Tea-infused Pancake Blini or Silver Dollar Pancakes

Maple Glazed Bacon

3/4 lb sausage, bulk or links, browned

4 oz micro greens or other seasonal greens
1 jar strawberry rhubarb, or other seasonal jam
4 oz maple syrup
4 oz soft, spreadable lavender and honey sheep milk cheese
4 oz premium blue cheese, at room temp
4 oz sharp Alpine-style cheese, sliced thin
2 Fresh Spring Omelettes with Sausage and Chives, sliced

Optional: fresh seasonal fruit, berries, pickled vegetables, nuts or other odds and ends that sound delicious to you!

Directions

On a large cutting board, lay out the pancake blini. Surround the blini with piles of bacon, sausage, sliced omelette, greens, jars of jam, maple syrup, cheese and any other accompaniments you are inspired to serve. Place serving utensils on the board and have fun exploring seasonal, local flavor combinations.
